Thousands of people in Baños and Ambato are already enjoying the famous Ponche Suizo. Its formula and preparation are in the hands of the Viera family and its place in history is guaranteed.
The Ponche Suizo is a sweet delight created by Serafn Viera more than fifty years ago and thanks to him this legacy has endured from generation to generation. For Roberto Viera, the current owner of the establishment located in Baños, this small concern has always been a family business.
“My grandfather, who was deputized in the time of Velasco Ibarra was the great visionary and creator of this unique drink which owes its name to the time he spent in Switzerland as a diplomat and politician. Although it is called Ponche Suiza, the drink is 100% Ecuadorian,” says Roberto.
Many foreign tourists including lots of Swiss travelers have come into the café inspired by the name. They are always delighted by the flavour and they recognize the originality of the product. Roberto says that when Swiss tourists mention that this drink is not from Switzerland he always ends up telling them the whole story.
Serafin Viera, inventor of the drink was always a man of a thousand ideas and a real innovator. He started selling his drink in Ambato from a small wooden cart in the streets and in a short time his success was such that he had opened a small café in Sucre street and to this day it is still thriving.
The creamy drink is best enjoyed with a pastry dessert and for many it is one of the most traditional delicacies in the country. Owing to its unique taste and consistency it has earned the recognition of locals and foreigners alike.
In Baños, a few minutes drive outside of Ambato, the second Ponche Suizo café was opened in 2007 under the administration of Roberto, who says he does not know the recipe of the famous Ponche. “I have never seen how to make the drink. It has always been something mystical in my family; my grandfather decided it would be a family secret to keep the tradition.” He said.
“The recipe is only known to two people in the family who prepare it and send it to me. I just have to put it in the blender before serving. When it becomes necessary, another sibling will learn the recipe to maintain the tradition.”
The Viera family are not interested in turning Ponche Suizo into a great chain. “With our two places we have gained a space in the market in Tungurahua province. Our primary concern is to maintain the high quality of our product and get the most positive recognition from our public,” adds Roberto.
The Ponche Suiza tradition began in 1952 as the legacy of the Viera Sanchez family who presented to the food industry a singular, creamy, refreshing, natural, and highly nutritious drink, unique in the country.
Miles de personas en Baños y Ambato ya están disfrutando del famoso Ponche Suizo. Su fórmula y preparación están en manos de la familia Viera y su lugar en la historia está garantizado.
El Ponche Suizo es una delicia dulce creado por Serafin Viera hace más de cincuenta años y gracias a él este legado ha soportado de generación en generación. Para Roberto Viera, actual propietario del establecimiento ubicado en Baños, esta pequeña preocupación siempre ha sido un negocio familiar.
"Mi abuelo, que fue diputado en la época de Velasco Ibarra, fue el gran visionario y creador de esta bebida única que debe su nombre al tiempo que pasó en Suiza como diplomático y político. Aunque se llama Ponche Suiza, la bebida es 100% ecuatoriana ", dice Roberto.
Muchos turistas extranjeros, incluyendo un montón de viajeros suizos han entrado en la cafetería inspirada en el nombre. Siempre están encantados con el sabor y reconocen la originalidad del producto. Roberto dice que cuando los turistas suizos mencionan que esta bebida no es de Suiza siempre termina diciéndoles toda la historia.
Serafin Viera, el inventor de la bebida siempre fue un hombre de mil ideas y un verdadero innovador. Empezó a vender su bebida en Ambato desde un pequeño carrito de madera en las calles y en poco tiempo su éxito fue tal que había abierto un pequeño café en la calle Sucre y hasta el día de hoy todavía está prosperando.
La bebida cremosa se disfruta mejor con un postre de pastelería y para muchos es uno de los manjares más tradicionales del país. Debido a su sabor único y la consistencia que se ha ganado el reconocimiento de los lugareños y extranjeros por igual.
En Baños, a pocos minutos en coche de Ambato, el segundo café Ponche Suizo fue inaugurado en 2007 bajo la administración de Roberto, quien dice que no conoce la receta del famoso Ponche. "Nunca he visto cómo preparar la bebida. Siempre ha sido algo místico en mi familia; Mi abuelo decidió que sería un secreto familiar mantener la tradición ".
"La receta sólo es conocida por dos personas de la familia que la preparan y me la envían. Sólo tengo que ponerlo en la licuadora antes de servir. Cuando sea necesario, otro hermano aprenderá la receta para mantener la tradición ".
La familia Viera no está interesada en convertir Ponche Suizo en una gran cadena. "Con nuestros dos lugares hemos ganado un espacio en el mercado en la provincia de Tungurahua. Nuestra principal preocupación es mantener la alta calidad de nuestro producto y obtener el reconocimiento más positivo de nuestro público ", añade Roberto.
La tradición de Ponche Suiza comenzó en 1952 como el legado de la familia Viera Sánchez que presentó a la industria alimentaria una bebida singular, cremosa, refrescante, natural y altamente nutritiva, única en el país.
Ante el aviso de derrocamiento de la vieja casona, en 1976, pasó la Heladería Suiza a su propio local, en la calle Sucre # 06-24 y Montalvo en la esquina del tan conocido Parque Montalvo, y ahí le han sorprendido varias décadas hasta la actualidad.
Después de los días de sus fundadores, en Febrero del 2008, sus hijos formaron una compañía llamada: VIERA SANCHEZ Cia. Ltda., con el propósito de modernizar el negocio tanto en el aspecto técnico, así como en el administrativo, para mejorar los procesos de fabricación, distribución y comercialización de su producto estrella: El Ponche Suizo.
En la actualidad, la compañía VIERA SANCHEZ Cia. Ltda. es la propietaria de los derechos legales de patente, marca registrada, fórmula secreta, así como también de los derechos de comercialización y fabricación del Ponche Suizo para los próximos 50 años.

Before the overthrow of the old house, in 1976, the Swiss Ice Cream Factory went to its own premises, on Calle Sucre # 06-24 and Montalvo on the corner of the well-known Montalvo Park to present.
